Betsy Dahlberg and Paul Allen are using local grains, corn, botanicals and fruit to distill Gwinnett’s very own vodka, absinthe, gin, bitters, amaros and (eventually) bourbon. Hope Springs Distillery has just started their first full-scale run of local vodka, and should be opening in the coming weeks. Housed in a renovated glass factory in downtown Lilburn, the couple plans to open a tasting room and events venue this summer.
