A small family farm focused on producing high quality food while leaving the world a better place, the Bankston Family Farm in Stockbridge strives to produce everything from vegetables to eggs to better communities.

“We believe that families are the most important crop we grow,” said Meredith Bankston. “We will work to ensure that our farm is a place of beauty, peace, joy and meaningful occupation to our family and to all who visit our farm.”

The Bankstons’ focus on future generations doesn’t just lend itself to people— these family farmers prioritize leaving their farm and surrounding community in better condition than they found it. They farm using natural and sustainable methods, support educational programs that encourage healthy eating decisions, and donate the first 25 percent of their production to local food banks.

MAMA’S SOUTHERN COLLARD GREENS

Ingredients• 1 bunch of collard greens, roughly chopped
• 8 strips of bacon, chopped
• 1 onion, chopped
• 2 cups beef broth
• Salt and pepper to taste

Directions
1. Cook bacon in skillet until crisp; remove and drain grease.
2. Cook onion in skillet until softened.
3. Place onion, bacon, beef broth, salt, pepper and collards in
a pressure cooker for one hour.
4. Serve hot!
